Will not putting my previous job role on my CV jeapordize my position?

You need to change jobs, not wait for her to try to fire you. She will. That's how 20 year olds act. Find a job where the boss is older than you are - it will work out a lot better for you that way. In the mean time, go to human resources on her every chance you get. Don't hold back, because it may intimidate her into being nice to you - or make the company see what a mistake it was to hire her because she is running off all their good help. She is supposed to be coaching and holding a team together - not insulting and offending everyone. She just doesn't have the maturity to be your supervisor. So do report her for anything and everything - you can be sure she is doing it to you and trying to get you fired - so you have nothing to lose and everything to gain by doing it to her.
